Omelette Muffins
I saw this great low carb recipe on Diet Doctor while I was searching breakfast recipes. So there is a story behind the low carb research, but that will be another post at another time. Anywhoodle, after reviewing the recipe, which I changed up a lot, but I still used items that were on the low carb menu. I will say as a disclaimer, I am not a doctor or nutritionist, so I can only offer suggestions based on what I am trying. I did not calculate the serving sizes or calories, I just can speak for what I did for my breakfast meal prep. The below recipe made 12 muffins and I put two for each morning. I used Texas style biscuits as the base, but I cut each biscuit into three pieces. The biscuits which are 16g of carbs per serving (1 serving is 1 biscuit), I used 4 biscuits. That calculates to approximately 5g of carbs per muffin. Feel free to use what you would like from the recipe and I would love to read comments on possible substitutions for certain ingredients. I wish I had more pictures of me prepping, but I didn't think about it, until after I tasted the finished product. However, it was super easy and cooked within 20 -25 mins.
What you will need
- 6 eggs
- 2 oz ground sausage (I used 1oz HEB maple ground sausage and 1oz HEB italian ground sausage)
- 1 cup spinach
- 1 cup onions
- 1 cup green peppers
- 4 HEB Texas Style Buttermilk Biscuits
- shredded cheddar cheese
- Pam spray
- Muffin Pan
- 1/4 cup of milk (I used SO Delicious Dairy Free Unsweetened Coconut Milk) optional
P.S. I would definitely try it with bacon, if you are like me and LOVE bacon
Preparation
First I preheated oven at 400 degrees and sprayed the muffin pans with Pam, while I cooked the sausage. After cooking the sausage, I opened biscuits and cut each biscuit into three pieces and placed each piece into the muffin pan. I did use garlic powder, onion powder, and seasoned salt to flavor my eggs. I mixed milk into the eggs to make the eggs fluffier, plus it stretches the mix.
For the first six muffins, I placed some spinach, peppers and onions into each muffin, then I placed in the sausage, next I poured the egg mixture and topped with cheese. These are why these are more yellow, because the cheese is on top.
For the second set, I placed the cheese on top of the biscuit, then I put in the spinach, peppers, onions, and sausages. Lastly, I poured in the egg mixture on top of each.
I placed the both sets in the oven for 20 mins or until golden.
